Southwest Chicken Tortilla Soup

*When we have missionaries for dinner I ask if they have any requests and one Elder got this recipe for me to make from his Aunt.

1 jar Tostitos cheese dip (salsa con queso)
1/2 cup sour cream
2 cups corn
1 can cram of potato soup
1 can chicken broth (I make my own with bouillon)
1 small can chopped green chili peppers (optional)
3 chicken breasts (cooked and shredded)
1/4 cup cilantro

Mix cheese and sour cream together.  Add all other ingredients.  Cook in slow cooker 4-6 hours (or simmer on stove for 1-2 hours).  Serve with Tostitos Scoops.  




Easy Chocolate Crock-Pot Dessert

1 (21 oz) can cherry pie filling
1 pkg chocolate cake mix
1/2 cup butter, melted

Place pie filling in slow cooker.  Combine dry cake mix and melted butter.  Put mixture over filling in Crockpot.  Cover and cook on low for 3 hours.  

*you can use any type of pie filling and cake mixes

Crock-Pot Chicken

Place 1 cup of rice on bottom of Crock-Pot (not minute rice) place chicken breasts on top.  Mix one can of cream of chicken soup with 1 can of milk and pour over chicken and rice.

Pork Chops

Place pork chops in crockpot and season with salt and pepper.

-shred for tacos
-mix with BBQ sauce and serve on rolls

Teriyaki Chicken

Chicken thighs, with skin off
1 onion, chopped (optional)

Place in crockpot and cover with Teriyaki sauce and cook on low for 5 hours.  Serve over rice.

Meatballs

Frozen meatballs
1 jar grape jelly
1 jar chile sauce (found by the ketchup in the grocery store)

Place in crockpot and cook on low for 3-4 hours

Candy Popcorn

For each bag of buttered microwave popcorn, melt 3 squares of candy quick melt and drizzle over popcorn.  

*you can find candy quick melt in the grocery store near the chocolate chips.  (Stater Bros carries it for sure.)
